Frustrated in this town!!

I live in el paso, tx and lately with all of the border violence in mexico, all of the families there have relocated over here. So that means a lot of people have also brought their restaurants also. That might be good for them, but its not good for people who actually care what they are putting in their BODIES!!

I was talking to my yoga instructor today and we both shared the same sentiment. Out of all the (literally) hundreds of reataurants in this city, there are about a handful of healthy eatablishments. The native el pasoans just don’t know better. They were raised unhealthy and will most likely raise their kids that way. That is why when someone gets an education from here, they must relocate because there is no work here for them. I so badly want to go into physical training or nutrition, but I’m afraid I’ll be out of work.

Well I guess for now all I can do is stick to the motivation that I have. Keep cooking my own clean meals, exercising because it is my passion, and hopefully in the near future my hubby and I will discuss making a move to a town less frustrating!

Great day

I feel like today was a really good day for me.

I started with a great breakfast of steel cutĀ oats and muesli mix. I might be adding too many things in but I want to make sure I’m getting full. I usually add 1 large strawberry, about 2 tablespoons of blueberries, 1 teaspoon of walnuts, a splash of almond milk. Hmm something to consider… Oh yeah I also have a slice of Ezekiel sesame toast with almond butter and some type of new spread I found called rose hip butter. It sounds hilarious but it is awesomely delicious! I discovered it at the world market. That place is like my second home I swear. I don’t know what I would do without it.

I then went through my normal routines of cleaning dishes, cleaning the rooms, and just picking up the house without serious cleaning. And of course, racking my brain of what to have for lunch. I usually have some awesome lunches, but lately I want to change it up so that I don’t get bored and eat junk food. I like to have my meals prepared, at least in my head, because it leaves me less stressed, and i love having that part of my life controlled. For so many years, that was such a struggle for me. I would just decide what to eat pretty much by what was in front of me.

It was finally gym time! I usually love my gym time especially when it’s my weight training day. But its stillĀ spring break for some school districts around here, so there were a bunch of flirting teeny boppers around! They can be so annoying. Why don’t they just hang out at the mall like I used to… Sheesh. Anyway so today I

just did my weights in the womans center since I was literally all alone! It’s pretty awesome I must admit!

My lunch turned out really good. Shiritake noodles mixed with summer squash, sun-dried tomatoes, broccoli, and a laughing cow cheese. Sweet potato on the side

with a miso soup that I could not finish. Yay for not cleaning my plate!

For my afternoon snack I had a kale and fruit smoothie that sounded pretty gross at first but came out delicious:

Green Smoothie Recipe

(1 serving)

1 cup frozen mixed berries

1 cup kale

1/2 banana

1 cup water

Tear kale leaves off of stems and tear into small shapes. Put berries, kale, 1/2 banana, and water into a blender and blend until smooth. Enjoy!
