Goodbye 2011

Happy new years eve to you! This year has definitely flown by. I had my ups and downs with friends, family, and weight loss. But isn’t that what life’s about? We have good days and BAM, something sneaks up on you. But we deal with it and move on, right?

In 2011, I started fairyhealthylife. I had no idea what a great community bogging has. I’m so glad I decided to start documenting my life. I have been given some great opportunities. The purple purse tweet-up was my favorite. I met some amazing people in my town and was able to reach people who need help overcoming domestic violence. I hope to do more work like this in El Paso.

We don’t have any special plans tonight. A relaxing evening at home away from the drunk drivers. I prefer it that way anyhow! I have a 10 mile run in the morning, so I need my sleep. Since I haven’t share my food lately with you all, I thought today would be a great day for that.

Breakfast was pre-workout pancakes without the workout! Ha ha. So it was the same, just no protein. I added two tablespoons almond flour to the mix to thicken it up. Lunch was instant miso soup with a veggie pattie wrap with some quinoa and sun- dried tomatoes leftover.

Dinner was a big salad with some food should taste lime tortilla chips.

My goals for 2012 are to finally become a personal trainer. I think it will give me the confidence and content with my new body. I already have and cannot wait to inspire people to change their lives for the better. I feel it is destined to be my career. My other goal is to start saying NO. I say yes to everyone. I go out of my way to not upset others by telling them what they want to hear. No more of that! There’s a difference in doing things out of the kindness of your heart and letting people walk all over you. I’m looking forward to the first one. :)

Post-Christmas lazy

Are you having a christmas hangover? I almost did. And it could have become permanent. Yesterday, I woke up late and my body felt sluggish and tired. I had no energy. I was a lot like I did two years ago before I started taking care of my health. I didn’t work out and I felt guilty all day.

I made sure to make up for it today.  My long runs are usually scheduled for sundays. But with it being christmas, I postponed it. I really wanted to do the 12 miles the schedule read yesterday, but my body wasn’t feeling it.

My girls went to spend the night at their grandma’s house last night. This was my chance. If I didn’t do it this morning, it probably wouldn’t have gotten done at all.

I left the house a few minutes after 8. (For some reason it takes me longer to get dressed to run than it does for any other day). I started out slow and tired. It was only 30 degrees out, so it took me about 2 miles to warm my body up. I decided to take a break every 4 miles. Because last week I ran the whole 11 miles, and I was hurting bad all day. I found that it helped me pick up my speed and now I’m not in too much pain. The last 2 miles were a little slow but I’m glad I didn’t quit.

For breakfast I had steel cut oats, ezeikiel bread, and green tea. Breakfast of champions!

Lunch was a large helping of quinoa pasta with shrimp for protein and eggplant and zucchini.

I absolutely love watermelon. Yes, I know its winter. But I can’t get enough of it. It keeps me full and I love the taste. And if I get cold while eating it, I could just turn on the heater. :)

For dinner, I’m thinking of making the eggplant lasagna from clean eating magazine.

If you are struggling getting back into health mode, remember it just takes one workout. You will so much better and it will give you the motivation to keep it up!

I’m a little fed up with seeing all of your delicious recipes and treats lately. Everything looks beautifully yummy!

I love to give treats to family and friends. But as you know, my new oven is still not here yet.

But I don’t care. I turned on my old, antique oven hoping it would stay on long enough.

My husband mentioned one of the secretaries from work took some cookies with no flavor at all.

So of course I HAD to bake for him. I’m sure that’s why he still loves me. ;)

I baked a tub of cookies that we ordered from my daughters school fundraiser.

I wanted to add something homemade so I also baked some ginger spice cookies. They came out pretty flat. I’m sure if you add an other cup of flour they will be a thicker cookie. These are good to fill up bags mixed with other treats.

Ginger spiced cookies & oatmeal raisin cookies

Ginger Spiced Cookies

Ingredients:

  • ½ c butter, softened

  • ¼ c coconut butter, softened

  • ½ c unsweetened applesauce

  • ½ c pumpkin puree

  • 1 cup molasses

  • 2 egg whites, 1 whole egg

  • 1 ½ cups all purpose flour

  • 1 tsp. Baking soda

  • 1 ¼ tsp. Ginger

  • 1 tsp. Cinnamon

  • 1 tsp. Allspice

  • ½ tsp. Nutmeg

Instructions:

  1. preheat oven to 350*. combine butters in mixing bowl. Beat on medium speed until creamy. Add applesauce and pumpkin and mix well. Add the molasses and eggs and beat until mixed well.

  2. In a separate medium bowl, combine the flours, baking soda, ginger, cinnamon, allspice, and nutmeg. Stir until combined.

  3. Slowly add the dry ingredients to the wet. Stir well. Drop the dough by heaping teaspoons onto prepared baking sheets. Bake for 10 minutes or until lightly browned. Transfer to wire rack to cool.

**Optional**- drizzle cinnamon butter glaze over cookies. I highly recommend this since the cookies are not very sweet.

Cinnamon Butter Glaze

Ingredients:

  • 1/3 c melted butter

  • 2 tablespoons vanilla extract

  • 1 tablespoon cinnamon powder

  • 1 cup powdered sugar

Instructions:

  1. In a medium mixing bowl, use an electric mixer to blend the butter, vanilla and cinnamon. Slowly add the powdered sugar. Mix until creamy about 2 minutes.

  2. Glaze over cookies or bread.

Christmas time brings on stress, anxiety, and unwanted problems. Oh no, I forgot to buy this person a present… Someone took that last toy… she took my parking space…I ate too much..

The list goes on. But of course, there is always someone that has more problems than you or myself.

It can affect you more than you realize. If you have a child in the public school system, it affects them. If you are a teacher, it affects you and your whole family.

Did you know that teachers spend about 40 dollars each month on classroom teaching essentials. Personally, I think it is so much more. I know my daughters teachers always have and so did mine. Just to have the basic supplies in the classroom they need to. It is not an option. They have big hearts and love their students just as they were their own.

Donorschoose.org is an online charity that makes it easy for the anyone to help students in need.

DonorsChoose.org - Give to a classroom! - Go

Here’s how it works: public school teachers all over America post classroom project requests on the website. The requests range from everyday tools like pencils, erasers, rulers and so on. Or musical instruments, microscope slides, printers, and I could go on all day here.

Then you can browse through the project requests and give any amount to the one that hits home with you. Once a project is full funded, the materials will be delivered to the school. I absolutely love that they send you photos of your project taking place, a thank-you letter from the teacher, and a report showing you how each dollar was spent! As a bonus, if you give over 50 dollars, you will also receive hand-written thank you letters from the students! That’s probably the sweetest part of it all!

As I was browsing the website, the project that caught my attention was from a teacher in California teaching at a high poverty special needs elementary school. There are nine students in her class. They are 3rd-5th grade and severely multiply handicapped, both physically and mentally. None of them speak. They are working on communicating with photos. They are not motivated by toys because they have limited use of their hands. But they love watching computer programs and watching children on TV.

Mrs. Gibbs is requesting a video camera and writable DVD’s so she can take pictures and video of her students and the people around them to encourage talking and communication. How special would that be?
