february foodie pen pals

Through the wonderful world of blogs and twitter, I came across some really cool ways to make friends with other foodie obsessed bloggers. Foodie pen pals was started by lindsay over at the Lean Green Bean Blog.

The blogger who received my name this month is Richgail. I won the lottery with this girl. She runs her vegan blog at Astig Vegan. You should stop by!

I received my package early in February. I had no idea what to expect. You really are going in blind in these kind of things. there is a fear of the person absolutely hating what you send. I was lucky. No one would be close to getting the stuff I got, and it made me feel special.

When I opened the box, I thought it was my birthday for a sec. I love how she put everything in a gift bag. I opened the card first. She sent me products based on my love for a healthy lifestyle and her vegan filipino way of eating. I couldn’t be more excited.

 

 

We attacked the trail mix right away. Richgail put it together herself. It is a delicious mix of filipino dried fruit and nuts. the girls were just as excited as I was. Amani couldn’t put down the freshly picked  kalamansi fruit. She included a recipe for a juice blend, but unfortunately, we couldn’t put em down! They were delicious enough as is. they tasted like a mix of an orange and grapefruit.

She also included some dried watermelon seeds. I was a little embarrassed, I didn’t know whether I was supposed to eat these or plant them. But I asked Richgail and she kindly explained there for edible consumption. Shes so kind and didn;t make me feel dumb. So now I carry them with me when I want something to munch on.

2 cans of filipino coconut  juice. Very delicious and not too sweet. She does use coconut milk to bake like I did for my banana bread, but didn’t want to send it in fear of it not lasting through the mail.. Th mango candies were just as good as everything else.  Thank  you again Richgail!!

If you want to take part  in all of the fun:

-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
-Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

Year one

Its been one year since fairyhealthylife was created. I jumped into the blogging world to share my weight loss story and to hold myself accountable to keep the weight off. If I just inspired one person to move more and eat healthier foods, it was worth it. It has changed more people than I know! If you do it the healthy way, weight loss is not easy. Some prefer to do it in secrecy. Following blogs is a great way to get advice and have a support system, without the feeling of being made fun of or a fear of failure.

I have made so many blogging buddies who are so kind and encouraging in my lifestyle. There are not many people in my town who understand or much less appreciate it. Thank you my friends for all of your kind words and for reading my blog. I have had some great sponsored giveaways. My favorite has been the chobani champions giveaway! There are a fantastic company and are trying to change the way children snack.

Being a part of my community is something I never thought I would be able to do. The purple purse tweet-up made me realize I can have different parts to my life. Volunteering to help out others is important to me, especially at an event where money will be raised to help abuse victims. Thank you Allstate and Y.W.C.A for allowing me to be a part of this!

I love sharing my recipes with you. They have come a long way, but I still have so much more to learn.  Cooking is my passion and so my homemade recipes are a big part of that. I hope you have tried one or two. I plan on posting so many more with the next year! Here’s to another year! CHEERS!!

Long time no see

Hi there WIAW, its been far too long. I’ve been giving you recipes but not sharing what I’ve been eating. Sorry friends.

Peas and Crayons

I’ve gone back to fueling my workouts with more protein. Trying to gain some muscle around here! So lots of salmon, sweet potato, and kale.

My breakfasts have still been more or less of the same. Oats, protein pancakes, and egg white omelets. Of course still delicious.

I’ve been eating egg white omelets for dinner for the past two weeks. It keeps me full and gives me the energy I need the next morning. Sorry too hungry to take pictures! But here are some of my snacks.

This granola has been made every week for the past month. Too delicious!

By the way, if you are looking for an at home kick butt workout, I recommend Jillian Michaels’ extreme shed & shred. It comes with 2 workouts.

(Level 1 & 2) each are 30 minutes long. It works your whole body and leaves you wanting to hit the floor if you do both of the workouts together. She combines kick-boxing, yoga, cardio intervals and weight training so you are never bored! I’m already seeing results in my waist and arms!

Here’s another bit of info for you. In the recent issue of oxygen magazine, it says recent research shows that “55 to 75% of calories in nuts are not fully absorbed by the digestive tract.” They are mostly excreted by your body. And that is why nuts have been proven to aid in weight loss and maintenance! I think that’s great news! Most days, nuts are my go-to snack. Just keep your servings at 1 oz.

Coconut Chocolate Chip Clif Bar {recipe}

Do you remember when I told you I was working on a recipe for my favorite clif bar? Yes, I know that was a while back. But first I had to consume the first batch I made. Well now that’s finished, I made it again, and this batch came out so much better! I really love this flavor combination. I used the bars to fuel me when I was training for my half- marathon. They are great for pre-workout to give you the energy to last without all the sugar. It doesn’t hurt they are have chocolate either! Recipe? Sure, that’s what I’m here for.

Coconut Chocolate Chip Protein Clif Bar:

    Ingredients:

2 cups oats

½ cup whole wheat flour

1 tsp. Coconut oil, melted

¼ cup prepared pb2

¼ cup stevia in the raw

1 tbsp. Chia seeds

¼ cup chocolate chips + ¼ cup for drizzle

2 scoops protein powder

2 tbsp. Shredded coconut

¼ cup applesauce

1 banana, mashed

¼ cup water

    Instruction:

1. In large bowl, combine oats, flour, stevia, chia seeds, ¼ cup chocolate chips, protein powder, and coconut.

2. In small bowl, mash the rest of the ingredients together until mixed well.

3. Add wet ingredients to dry ingredients until mixed well. Add water slowly until mix comes together.

4. Spread mix in baking sheet. Press down. Bake at 325* for 25 minutes or until edges turn golden brown.

5. Allow to cool. Slice bars to your liking. Melt chocolate chips in microwave according to package instructions. Drizzle chocolate over bars. Let chocolate set before storing. I put my pan in the freezer for 20 minutes to set the chocolate, then stored the bars in a Ziploc and froze them.

Enjoy!

I recommend freezing them and heating each for about 30 seconds before eating.
