May Foodie Pen Pals Reveal

For the month of May foodie pen pals, Ashley who blogs at The Unintentional Vegan was paired up with me to send over some goodies. Her blog has so many great vegan recipes and product reviews. Whether you are new to vegan lifestyle or not, she makes you feel welcome. You should check her out!

Ashley sent me a friendly note along with some great products.

I had to take a picture as soon as I opened the box. My girls spotted the chocolate cookie and were begging for it! It was so good!! What can I say, we love chocolate. A favorite of mine was the cashews. Im not usually a big fan of cashews, but these won me over. They are seasoned with pomegranate and vanilla.

Ashley also sent me a bag of “crazy bitch tea” from the company she works for. Don’t you just love the name?! I love herbal teas with cinnamon spice. Im a huge tea fan! I love finding new flavors. I am planning on ordering some from their website soon.

Thank you Ashley for everything! I loved it all!

Would you like to be a foodie pen pal? Here’s the info:

-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
-Foodie Penplas is open to US & Canadian residents. Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

WIAW: “New To Me”

Another Wednesday is here. So hard to believe right? I really love what everyone is cooking up on WIAW! I almost always find a few great recipes to try. Thank you Jenn for bring us foodies together!

I love keeping my meals fresh and different so I don’t become bored. I have a problem eating the same things for an extended period of time and then all of a sudden I hate it. That’s why I love shopping at different stores and markets to find the newest “new-to-me” products. A few of my favorite stores are super-target, Albertson’s, World-Market and Bed, Bath, & Beyond. It also might be that they also have great coupons. ;)

Breakfasts: Oatmeal minus the oats with strawberries, pecans, and chocolate chips. I found Sunland chocolate peanut butter at super-target. Sweet potato pancake mix with half whole wheat pancake mix. Topped with bananas and honey.

Lunch: For Memorial Day, I grilled kabobs. I used squash, bell pepper, mushrooms, tofu, and eggplant. A new instant brown rice and quinoa mix from Costco. The flavors combined together were so good! Another great lunch is vegetarian chili. I always forget how good this is.

Dinner: Yesterday I mixed both of my lunches and made a great salad for dinner. No dressing needed. Just a little squeeze of lime juice added.

Snacks: Watermelon greek yogurt ice pops. Recipe here. Soyummi vegan pudding. I’m so thankful they asked me to review these. Dark Chocolate is still my favorite.

Bunk Beds, 6.2 miles, and Giveaway Winners

Hi Friends! Happy Monday and Memorial Day! Thank you to all who have protected us and continue to do so for our freedom.

Well, remember my weekend of relaxation I had planned? That changed on Saturday when we decided to get the girls bunk beds. I cleaned their bedroom and toy room to while Rudy went to go pick them up. But besides that, we had a pretty relaxing weekend.

I managed to get my butt up Sunday morning at 5:15. I left the house at 5:45. The weather was perfect. The sun wasn’t out yet, but the temperature was already in the mid 70′s. I’m so glad I ran early. I set out for 6.2 miles. The first mile was really hard for me like always. I tried to just make it a warm up lap and not to rush my pace. I think I did okay. My goal time was 60 minutes. I finished in 1:01:15.

Mile 3: 9:39

Mile 4: 9:22

Mile 5: 9:38

Mile 6: 9:43

This showed me that I need to keep running at least 3-4 times a week, including one long run on Sundays. Especially if I want to run the El Paso half-marathon again next year, which I plan on.

The sun was really shining on me when I was done!

Today will be a laid back day for us. A little gardening and grilling for lunch. Kabobs on the grill are something I look forward to each summer. I’ve never tried tofu kabobs, but I will give them a try today.
