June Foodie Pen Pals

Today is the last day of June, so that can only mean it’s Foodie Pen Pal’s reveal day! This month Jane from her lovely blog , The healthy bee hive was paired up with me to send me some foodie fun. She sent me some really fun things, not only that; she also sent some treats for my girls. That was very kind of her. Thank you Jane!

She packed the box very well. I was surprised to see so many things come out of it. It was never-ending!

Jane sent the cutest card I’ve ever received!

 

 

It couldn’t be more perfect for foodie pen pals!

Amani loved it too! She couldn’t stop playing with it. She thought it was the funniest thing.

 

Everything she sent was sooo delicious! Of course, my favorite thing was her homemade blueberry mint jam! It is delicious. I have half of the jar left. I’m trying to savor as much as I can because I don’t want it to finish. Blueberry is my favorite jam flavor. The mint is very subtle but at the same time, refreshing. I need your recipe Jane!!

She also sent the girls a box of giddy treats. They are biscuits that taste like graham crackers (only tastier and more nutritious) with strawberry fruit dip. They are made of whole grains with nothing artificial and real fruit. You should look for these for your kids or even yourself. They are so good!

 

The whiteblossom tea was also very good. I actually had been meaning to try that one. It went very well with the granola cookie. The whole family has been snacking on everything Jane sent us. The next person Jane is paired with is very lucky.

And now it’s time for some details about Foodie Penpals.  In case you’re a new reader, here’s a reminder of what the program is all about:

-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions. -You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal! -The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination! -You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!) -Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month. -Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa.

Back on track for summer

Two Wednesday’s ago I shared with you I needed to evaluate my nutrition. I was feeling very weak and struggling with my workouts every day. Since then, I have been taking my vitamins, eating more grains and healthy fats. I’m so glad I listened to my body and look more into what I should be eating. I am feeling 100% better, thank goodness. My weight has stayed the same, even though I have been eating 300-400 more calories per day. I think it’s because I’m eating the foods that are good for me. I’m not eating those extra calories in chips and ice cream. It’s mostly hard-boiled egg whites, Greek yogurt, almond butter, brown rice, and oats.

I can already see the difference in the way I am feeling with the added foods.

Snack #1: (pre-workout) Hard-boiled egg whites and almonds

Breakfast:

 

Oatmeal with blueberries and almond butter. Ezeikial toast with blueberry mint jam from my FPP :)

 

Lunch:

greens, chopped egg whites, tomatoes, corn, kidney beans and shrimp

Drink of choice throughout the day:

Detox water: 1 cucumber, mint leaves, juice of 1 lemon

 

Snack #2: I’ve been loving this dried pineapple with chile my husband my husband brought home from work. It’s addicting.

I love Watermelon!

 

Dinner:

shiritaki noodles, shrimp, mushrooms and spinach

There are a lot of meals I didn’t share with you. I’ve also been eating a lot of sweet potatoes and quinoa with brown rice. I need to take more pictures for next week :)

Latest workouts & kickbox fastfix review

Happy Tuesday friends! I realized I haven’t shared my workouts with you in quite a while. I recently bought a new workout DVD; Jillian Michaels’ Kick box fast fix. It has three 20-minute workouts.

Workout 1: upper body toning

Workout 2: tone and sculpt lower body

Workout 3: abs

I tried it this morning. At first, I was turned off. It was fast, really fast. I’m not too coordinated with moves. That’s why I’ve never tried zumba. But after a few moves, I got into it. There are a lot of moves. You do them for 30 seconds and then move on to the next one. I recommend these individual workouts as a complement to a run or other cardio workout. I really loved workout 3. You will feel your abs stronger when you are done. I like the shed & shred DVD a lot more. It is much more intense.

I finally got a chance to try my compression socks! I love them.

Rudy got home and loved them too. I was surprised since he didn’t know I ordered them. Whoops. But he said they were sexy. Ok then, I’ll take it!

This summer, I’m realizing I shouldn’t be so strict on myself. The heat is making it hard to work out every day. We live in a dry area and this whole week the temps are going to be at least 100 degrees all week. I’m working out 4-5 days a week, as opposed to the usual 6. I’m only going to the gym only once or twice a week and doing the rest of my workouts at home. Chloe’s on summer vacation and I want to spend this summer having as much as fun as we can. They grow way too fast.

This week’s workouts:

Monday: 5 mile run (I got attacked by a mosquito about 15 times and didn’t notice until I was done. Ugh how annoying)

Tuesday: Kick box fast fix DVD

Wednesday: 3 mile run on treadmill, 60-minute yoga class

Thursday: Shed & Shred DVD: levels 1 & 2

Friday: 4 mile run

On Sunday, I’m going to try to get up early and go for a short run before the dreaded sun comes up.

Carnival, eating clean, & new fro-yo

This weekend flew by, but it was a great one around here. On Friday, we did a little shopping at the mall. I picked up a seitan wrap and soup to take with me from a natural market; the girls wanted Chick-fil-A.

My wrap came with squash, tomatoes, seitan, spinach and veganaise. The soup had kale, squash, tomato, onion and carrots. It was all so good. I need to remember make this soup at home to have on hand.

On Saturday afternoon, we headed to a small carnival at a local church. My mom invited us; her boyfriend plays in an oldies band and they were going to be playing there.

Of course it was pretty hot, but we ended up having a great time. I ate at home beforehand so I wouldn’t have to eat there. I knew there would only be unhealthy food options. The only unhealthy thing I had (the whole weekend) was a bud light: Lime-a-Rita. Have you tried it before? I didn’t really like it. It was too sour. I only drank a quarter of the can. I shared the rest with Rudy and my sister, Amirah.

Chloe and my youngest sister Alex won prizes in Loteria (Mexican bingo).

We had a great time!

On Sunday, Rudy and I got up before the girls to cut the grass and clean up the yard. Besides that, we just hung around the house. I had been having a fro-yo craving since Friday, so I did a little grocery shopping and stopped by on my way home. I tried a new flavor; Taro. I had never heard of it before. Of course, being the foodie that I am, it intrigued me. I asked the guy working there what it was, but he couldn’t really explain it. He said it is some type of root so it tastes a little nutty. Well that wasn’t enough explanation for me. But I did love it. I got the pistachio flavor with it. Topped with strawberries and blackberries, it was perfect.

Taro root is a vegetable native to Southeast Asia. You don’t actually eat the root. People think that because it is grown underground. It must be cooked in order for it to be edible. It is roasted baked or broiled and the natural sugars give a sweet nutty flavor. source.

I ate very well this weekend. Last night I noticed a difference in the way my stomach felt. I felt fresh, not bloated or gassy. My stomach felt flatter and stronger. I didn’t expect that. Now I know what they mean when they say, “abs are made in the kitchen”. I’m hoping to keep eating clean throughout the weekends.

I took a nap on my couch yesterday afternoon. It was the perfect way to end a great weekend. I feel energized and ready for a great week!
