WIAW: Protein Pumpkin Muffins {recipe}
For some reason WIAW posts are always my favorite to write. I love finding new ideas and recipes to add to my healthy life. I also love finding great ideas for the girls too. I’m pretty sure I will find some great ideas with this month’s theme.
The theme Jenn from Peas and Crayons came up for October is WIAW goes pink!
I love the idea of healthy Halloween treats! I can’t wait to find out all the details!
It’s a good thing I came up with a healthy recipe for you guys!
Before we get to that, let me show you what I’ve been eating lately.
Breakfast: Oatmeal minus the oats in an almond butter jar. I’m so sad because this is my last almond butter that I’ll be making for a while. I’ve been eating way too much of it. Finishing a jar all on my own in less than a week is not good. I hate that I become obsessed with certain foods and don’t eat much of anything else. Of course there are good fats in almond butter, but just like anything it can become bad if you have too much of it. So instead I’m going to be eating raw almonds instead for a while and see how I do. It is more filling that way too.
Lunch: Eggplant has been on sale for the past few weeks for a dollar piece. I couldn’t pass that up. This was a great light meal. A tortilla smothered in hummus and topped with eggplant that I cooked on the stove with just a little bit of olive oil and of course avocado. Another variation, I paired it with kale chips instead of broccoli.
Dinner: Rudy surprised me on Sunday night and actually cooked. He used to cook all the time but now with his long work schedule he hardly has any free time at home. He made steak tacos for him and the girls. For me he made fish tacos. I made some guacamole to go with it. So good! I think it probably tasted so good because I didn’t have to cook it!
Snacks/Treats:
Besides cooking, Rudy also took us to my favorite yogurt shop; Menchies! It was also the first time he got down and actually ate some.
I got red velvet cheesecake and cake batter. All I can say is WOW! That was the best combination I’ve ever had. It was a nice treat. Rudy tried the new dulce de leche. It was good, but very sweet for me.
I can’t wait for Menchies to open on my side of town! Although it could be dangerous.
A healthy snack I had pre-workout on Monday was 1% cottage cheese and half a peach. It was great fuel that I’ve never tried before.
I made some healthy protein pumpkin muffins. I’ve been trying to stay away from processed bars because they have so much junk in them, including way too much sugar. I like for each serving of anything I eat to have less than 10g of sugar.
I am pretty proud of these muffins. Not only are they healthy, but they are also delicious! I hope you try them. ![]()
Protein Pumpkin Muffins

Ingredients
- 1/4 cup apple sauce
- 1 teaspoon vanilla paste or extract
- 4 egg whites (beaten stiff)
- 1/2 cup pumpkin (pure)
- 1/2 cup almond milk
- 1/4 cup molasses
- 3 scoops protein powder
- 3 teaspoons pumpkin pie spice
- 8 drops stevia
- 1 teaspoon baking soda
- 2 cups oat flour
- 1/2 cup oats
- 1/2 cup walnuts
Directions
| Step 1 | Preheat oven to 375 degrees. In medium bowl combine all dry ingredients, except for walnuts. Set aside. |
| Step 2 | In large bowl, combine applesauce, vanilla, pumpkin, milk and molasses. Whisk until mixed well. |
| Step 3 | Beat egg whites until stiff peaks form. Fold into wet mixture. |
| Step 4 | Slowly add dry ingredients until all is absorbed. Add walnuts. Pour into greased pan almost to top. Bake 12-14 minutes. Allow to cool. |
