Quinoa with Butternut Squash and Mushrooms

Before I get to the recipe, the What’s Up Dig on Wednesday was a lot of fun but intense. There were so many people by the end of the night. It basically was one big party. The main objective was to vote for the best of the best local restaurants, people, events and so on. So many categories.

I’m so glad they made it simple to vote. You use your smart phone to scan a QR code and that takes you to the voting site. You enter a code that is different for each person, then start voting.

I was tired before it was over. It’s a good thing we didn’t have to wait for the results. They will be revealed in What’s Up publication mid June. I’ll share the results once I hear anything; Can’t wait!

As promised, here is the recipe for my quinoa with butternut squash and mushrooms. It combines some of my favorite foods that I had on hand last weekend. It tastes great on it’s own as a side dish paired with chicken or fish. I’ve also been throwing it my salads with more vegetables and spinach.

Quinoa with Butternut Squash and Mushrooms

Serves 4-5
Prep time 10 minutes
Cook time 25 minutes
Total time 35 minutes
Meal type Side Dish
A healthy option to add more flavor to quinoa with butternut squash and mushrooms.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 garlic clove (diced)
  • 1 curry powder (optional)
  • 3/4 cups white mushrooms (sliced)
  • 1 1/2 cup roasted butternut squash
  • 1 tablespoon olive oil

Directions

Step 1 036
Roast butternut squash. I bake mine with a little coconut oil and cinnamon for 35 minutes in a 375 degree oven.
Step 2 Rinse quinoa. In medium pan heat 1 tbsp. olive oil. Add garlic and mushrooms. When garlic is brown, add quinoa. Toast until light brown.
Step 3 Add curry powder and vegetable broth. Bring to a boil.
Step 4 Lower heat to low. Cook for 20 minutes or until quinoa has spiraled. You may need to add more water or broth if quinoa is not ready yet. Mix in roasted butternut squash. Enjoy warm or allow to cool and refrigerate.

 

And lastly, I’m racing again this weekend!! I seem to be in the running zone lately and I’m taking full advantage. There have also been some amazing and fairly priced races happening around here these past few months. I’ll be running The Braden Aboud Memorial Run 10k on Sunday. I already know the route will be through some gorgeous communities. I’m very excited and feeling great!

5k for PK: Race Recap

It was such a busy week that I completely forgot to register for the 5k. I usually register online the week before because I like to have my race number and clothes ready before the race. So I had to resort to registering at the race.

PK stands for Danny Pecquet. He lost his battle with cancer and the proceeds from this race are to benefit The Rio Grande Cancer Foundation.

I ran to the race site which was Hanks High School which is about a mile from my house to warm up my legs. It usually takes me a mile to get moving at a regular pace.

Well I got there and I didn’t see anyone. I was freaking out a little. So I kept jogging around the school and finally found them; it’s a good thing they had music playing. I don’t have the best sense of direction because if I’m lost I panic. But I finally registered and relaxed for a few minutes before the race started.

It rained the night before so there were a lot of puddles to jump over on the route. But I was thankful for the clouds that stuck around to shield off the sun. The El Paso sun has a way of really draining you.

I felt great throughout the whole 3 miles. I didn’t stop once and was able to still speed up at the last 1/2 mile comfortably.

And this is my “ you’re exhausted but don’t make a horrible face because your picture is being taken” face. So I just closed my mouth, sprinted and tried to breathe. It worked!

Finish: 26.02!! I was so excited! I really couldn’t believe it. I was able to take off more than a minute since my last 5k which was in February.

I think maybe now those who question why I eat so healthy can understand why. It’s what helps me keep pushing to become a faster runner. Goals are so important to me. I feel a great sense of accomplishment when I can reach them. Eating healthy is just one part of that equation and I really do love it!

Updates

1. Lots of ups and downs happened in these past few days. More ups then downs.

My mom informed me that the Boston Strong run was featured in the latest issue of the Tejano Tribune (a local community college newspaper). I was so excited! I wasn’t sure when or if my interview would be published. I still feel like it was one the best things I’ve ever been a part of.

2. I had a really good weekend up until Sunday. I’ll get to that in a minute. Saturday I went to boot camp once again and had a great time. Lots of high intensity training and 5 minutes of burpees. Do one and they seem simple, but after 5 minutes all of the muscles in your body are on fire. I was able to do 89 burpees. I wasn’t really sure what a good number was, but I was very proud of myself  because I know I pushed myself until I couldn’t anymore. It felt great.

Now on to Sunday; it was my rest day but I always do some sort of yoga everyday. I did a chest to wall handstand. I was comfortable in the pose. I walked my hands away from the wall and preceded to cartwheel to the side. My right shoulder locked and I completely lost my balance. On the way down I scraped my foot, hit my knee and landed on my head.

It didn’t seem so bad at first. I was in a little bit of pain but I’ve fallen before so I assumed I would be okay. I went on with the rest of my day. As each hour passed, I started feeling weak and very tired. That’s not very typical for me so I knew this was more than just a little fall. Even though I wanted to take a nap I knew I needed to stay up to make sure I didn’t have a concussion. I did have a headache. I just sat the rest of the day. It’s been a while since I’ve done that but my body really needed it.

I’ve learned it’s so important to listen to your body. I’m feeling 90% back to normal.

3. I’ve been nominated for best local blogger in what’s up magazine, an El Paso entertainment publication. So my local friends, if you are going to be attending the “dig” May 15th, I’d love it if you could vote for me.

MIMM: A Beautiful Shower

I had a fun Saturday evening at my sister Lana’s baby shower. But first I had to get my workout in. I felt like I couldn’t really start my day until that happened. I went to boot camp for the third week in a row. Not sure how that happened but I’m really loving the class. I made sure to tell the instructor I love how each class is completely different. To my local friends, you should really try it. EP Fitness- Montwood location. Saturdays, 8:30 a.m.

I haven’t been running long miles and I’m really enjoying the changes my body is making. I’m lifting more weights and doing a lot of body weight training. My loose skin is slowing disappearing. I’ll get back to long running toward the end of the summer because there is a half marathon in October I want to race in.

My sisters baby shower was beautiful. She deserves it. Lana has such a kind heart and is an amazing aunt to my girls. We cannot wait for Kennedy to join our family.

We of course have to take a family picture. I think it’s very important to have them and cherish the moments we spend together. I love my sisters and mom. I wouldn’t be the person I am without them.
