Quinoa with Butternut Squash and Mushrooms

Before I get to the recipe, the What’s Up Dig on Wednesday was a lot of fun but intense. There were so many people by the end of the night. It basically was one big party. The main objective was to vote for the best of the best local restaurants, people, events and so on. So many categories.

I’m so glad they made it simple to vote. You use your smart phone to scan a QR code and that takes you to the voting site. You enter a code that is different for each person, then start voting.

I was tired before it was over. It’s a good thing we didn’t have to wait for the results. They will be revealed in What’s Up publication mid June. I’ll share the results once I hear anything; Can’t wait!

As promised, here is the recipe for my quinoa with butternut squash and mushrooms. It combines some of my favorite foods that I had on hand last weekend. It tastes great on it’s own as a side dish paired with chicken or fish. I’ve also been throwing it my salads with more vegetables and spinach.

Quinoa with Butternut Squash and Mushrooms

Serves 4-5
Prep time 10 minutes
Cook time 25 minutes
Total time 35 minutes
Meal type Side Dish
A healthy option to add more flavor to quinoa with butternut squash and mushrooms.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 garlic clove (diced)
  • 1 curry powder (optional)
  • 3/4 cups white mushrooms (sliced)
  • 1 1/2 cup roasted butternut squash
  • 1 tablespoon olive oil

Directions

Step 1 036
Roast butternut squash. I bake mine with a little coconut oil and cinnamon for 35 minutes in a 375 degree oven.
Step 2 Rinse quinoa. In medium pan heat 1 tbsp. olive oil. Add garlic and mushrooms. When garlic is brown, add quinoa. Toast until light brown.
Step 3 Add curry powder and vegetable broth. Bring to a boil.
Step 4 Lower heat to low. Cook for 20 minutes or until quinoa has spiraled. You may need to add more water or broth if quinoa is not ready yet. Mix in roasted butternut squash. Enjoy warm or allow to cool and refrigerate.

 

And lastly, I’m racing again this weekend!! I seem to be in the running zone lately and I’m taking full advantage. There have also been some amazing and fairly priced races happening around here these past few months. I’ll be running The Braden Aboud Memorial Run 10k on Sunday. I already know the route will be through some gorgeous communities. I’m very excited and feeling great!

5k for PK: Race Recap

It was such a busy week that I completely forgot to register for the 5k. I usually register online the week before because I like to have my race number and clothes ready before the race. So I had to resort to registering at the race.

PK stands for Danny Pecquet. He lost his battle with cancer and the proceeds from this race are to benefit The Rio Grande Cancer Foundation.

I ran to the race site which was Hanks High School which is about a mile from my house to warm up my legs. It usually takes me a mile to get moving at a regular pace.

Well I got there and I didn’t see anyone. I was freaking out a little. So I kept jogging around the school and finally found them; it’s a good thing they had music playing. I don’t have the best sense of direction because if I’m lost I panic. But I finally registered and relaxed for a few minutes before the race started.

It rained the night before so there were a lot of puddles to jump over on the route. But I was thankful for the clouds that stuck around to shield off the sun. The El Paso sun has a way of really draining you.

I felt great throughout the whole 3 miles. I didn’t stop once and was able to still speed up at the last 1/2 mile comfortably.

Mile 1: 8:34

Mile 2: 8:40

Mile 3: 8:22

And this is my “ you’re exhausted but don’t make a horrible face because your picture is being taken” face. So I just closed my mouth, sprinted and tried to breathe. It worked!

Finish: 26.02!! I was so excited! I really couldn’t believe it. I was able to take off more than a minute since my last 5k which was in February.

I think maybe now those who question why I eat so healthy can understand why. It’s what helps me keep pushing to become a faster runner. Goals are so important to me. I feel a great sense of accomplishment when I can reach them. Eating healthy is just one part of that equation and I really do love it!

Boston Strong El Paso recap

When I first read about Brian’s (Pavement Runner) idea about cities around the world organizing a memorial run one week after the Boston Marathon I thought, wow this could be amazing and something that can bring communities together when most of us feel alone and confused, runners or not. I have to tell you, I didn’t really want to run last week. I ran two days after the Boston marathon and I felt vulnerable and angry. I needed more time or maybe something like a community run to find my love for running again.

I checked to see if there was going to be anything like this in my area. There was two runs happening. One was on the other side of town and one was postponed because police escorts were going to be required. I thought I could do this. I could organize this for East El Paso. I have no clue why I thought that. I am not one to volunteer to be a leader. More than anything I think I just wanted to run again with my community. I knew we could run at a park without needing police escorts and closing down streets.

So I created a Facebook event and linked it to Brian’s blog. I hoped 30 people would commit and show up. I had no idea there would be a lot more interest. Each day there were more invites. This made me so happy but my nerves were wanting to take over. I kept feeling like I was doing something wrong or like I was forgetting something. I’ve never done anything like this so I had no clue. Everyday I went to the event page and all I saw was “you’re hosting”. It was like Facebook was telling me good luck girl, it’s all on you. It was. My reason for organizing this run was greater than my fear. Running has made me a better person. I know I couldn’t be the only one who was apprehensive to run again.

I arrived at the park at 6:15. I was shocked to see a lot people already there waiting. By 6:40, everyone was ready to start. I wanted to let as many people get there before taking a group picture then heading out to run. About 15-20 more people arrived after we took the picture.

It was nice to see a lot of people stick around after to talk and introduce themselves to other runners. I saw a lot of familiar faces from the races I take part in.

World’s Fastest 10k 2013 (race recap)

Yes, I raced this weekend! It was a very last minute decision but I’ve wanted to take part in this race since I got the flyer at the half marathon packet pickup. I think anything with that starts with “world’s fastest” will get my attention.

World’s Fastest 10k is a USATF certified downhill course starting at the top of Transmountain Road at an elevation of 5200’ and finishing on Northwestern at 3800’

I usually don’t wear a race shirt to my races because usually they are too big or cotton t-shirts. I like the moisture wicking tees for any type of workout I do. Luckily the sponsors of this race supplied us with a great fitting technical Brooks tee. I really loved everything about it, even the neon green color. The Run Happy bracelet was a nice touch too. Thanks Brooks!

I woke up around 5 Sunday morning because I couldn’t stay in bed any longer. I was excited to run.

The race was set to start at 8 but I had to get there early to take a bus to the start line.

I was getting pretty restless just sitting in the bus.

We arrived at the start line around 7:20 and still had 40 more minutes to wait for the race to start. It was a little windy and cold up there. I just really wanted to start so that my body can start warming up.

We finally started and I felt great. I felt like I was going a little faster than my usual pace, but knew it was okay because I was going to be running down hill the entire time.

Mile 1: 8:05 min/mi.

At mile 2 I began to speed up a little. I had a lot of energy and felt very light on my feet.

Mile 2: 7:51 min/mi.

Mile 3: 7:42 min/mi.

I was still feeling really good and steady. I didn’t start to feel tired until mile 5. That’s probably because the temperature was barely starting to climb. But I was still pushing all the way to the end!

Mile 4: 7:51 min/mi.

Mile 5: 7:53 min/mi.

Mile 6: 7:50 min/mi.

Final Time: 49:02!!!!

Looking at those numbers and I am still in disbelief. My previous 10k time was 56:44. I have never ran anything faster than maybe 8:20. And to be able to keep running faster at every mile, I am truly proud of myself.

Granted, I know it was all downhill but I feel like I have become a faster runner over the past few months. Being consistent really pays off, you just have to stick with your goals and work your butt off. Even during those cold winter months.
