WIAW: Eating In A Hurry

Happy What I Ate Wednesday! This is what I’ve been eating lately; not all of this is from one day. Be sure to check out Peas and Crayons for more food inspiration.

I love my Keurig Brewer but the k-cups can get pretty pricey even though I only drink coffee 2-3 times a week. I found this cup at Marshall’s for about five dollars to add my own coffee to save money. Sure, it takes a little time as opposed to using a k-cup but tastes just as good.

Breakfast was oatmeal with egg whites, almond butter, blackberries and lots of cinnamon. I’ve been eating this with a few variations for a few months now and it doesn’t get old for me.

With all my nerves yesterday, I almost completely forgot to eat lunch. Once I realized that I needed to put together something quick. I made a wrap with tzatziki sauce, squash and mushrooms cooked in coconut oil topped with a green chile. Sweet potato on the side. It was so good.

I don’t eat out very much because it can be very difficult to eat healthy here. But this weekend I picked up a vegetarian bowl from Chipotle. I added my own jalapenos. It was delicious!

Sunday was spent enjoying the rest for my body and attending a baby shower for a friend.

It’s been too long since I’ve had a reason to dress up. I was living in running and yoga clothes for the past 3 months. I do love them, but it’s nice to feel pretty sometimes.

The navy shower was at a Mexican restaurant, so I was already worried about what I would eat. I knew it wasn’t going to be healthy, but it wasn’t as bad as I thought it would be. The food didn’t look too greasy so I went for it. I was pretty hungry.

I wasn’t very full and it made me realize why I was overweight when I ate like that. All I was eating was empty calories. I was missing my whole grains, filling vegetables and protein.

Even though I didn’t eat it, I thought this cupcake was so adorable not to share. I took it home to my girls. They just didn’t like there was a surprise pineapple filling in the middle.

Groundhog Dash 5K

I did not go into this race with any exceptions besides beating my own time of 32 minutes. That’s all I wanted to accomplish. After all, I only signed up 2 days before the race.

I didn’t wake up late but I was rushing a little to eat my Ezekiel toast, banana and drink my green tea. It’s a good thing the park is only a 10 minute drive from my house because I forget my race number at home!! I’m such a dork! Well I made it with enough time to still do a short warm up run.

The race started right at 8. The only thing I didn’t like was that there were SO MANY potholes for the first half mile. I was really getting scared I might twist my ankle. But once we first turned the first corner the road improved and I felt comfortable.

Final time: 26:50!! Are you kidding me??! That is a PR I didn’t expect. I have never ran that quick. I never even run in the 8’s!

Sure, I could have picked up my speed during the second mile. There is always room for improvement. I love knowing that I can push harder even though that was the fastest I’ve ever ran 3 miles. The weather was perfect and I had a lot fun.

This race gave me a new found motivation to keep running and have the confidence to call myself a runner and a good one at that. I might not be the fastest, but I will always work my hardest no matter what! Thank you my friends for the push and support!

The rest of the day was spent enjoying the day and the sunshine! I didn’t want to spend the time fixing my hair. Smile

11 Cold Miles; Still Marvelous

What a cold weekend it was here in Texas. On Friday, like I said I was going to, I went for a run at the park. I warmed up for 2 miles, then ran .5 mile at 5k speed then jogged another .5 mile. I did this for 3 miles. It was a lot of fun to push myself. It was pretty windy too so I could feel myself trying to run harder than usual. I was feeling very sore the next day.

Mile 1: 10:08 min./mi

Mile 2: 9:15 min./mi

Mile 3: 9:10 min./mi

Mile 4: 9:32 min./mi

Mile 5: 8:56 min./mi

Saturday was finally a rest day and I took full advantage of it. I finally got my frozen yogurt I’ve been wanting.

On Sunday was one cold 11 mile run. I’m not even kidding, I didn’t want to go at all! I checked the weather the night before and it said the temperature was going to be be 23 degrees but feel like 14. Gulp. I waited till 8 a.m. I knew it wasn’t going to get much warmer out so I bundled up and sucked it up.

It took me about 3 miles to warm up and get my legs moving. It was a little bit hard to control my breath at first. Once I hit 5 miles at the park I usually run at, it felt like I was at my second home. I don’t know what it is about that park but running on the pavement there and knowing every corner makes me feel so comfortable and my legs just seem to go on their own. I love that feeling. I just hope I can do that at the race.

The best part is that I didn’t wrap my knee and I didn’t have any pain at all!! I really hope I can stay that way.
