Father’s Day & The Best Thing I Ever Ate

Just like we planned, we had a very nice relaxing weekend. Saturday morning I tried to do a little shopping. I need new clothes but I hate spending so much money. The only thing I bought was a bathing suit at Macy’s. It was 70% off. I don’t mind paying for things when I can get a great deal like that; especially on a bathing suit. It’s a tankini and a skirt. My sisters said, “You can wear a bikini and look great. Why don’t you?!” Aren’t they the sweetest sisters ever?! I have some skin on my stomach that no matter what kind of exercise I do, I will NEVER get rid of. Unfortunately only surgery will take care of the problem. I can feel muscles on the inside but will never see a flat stomach because of the extra skin. Okay now I’m getting off topic.

Saturday afternoon, we celebrated father’s day with my mom at Olive Garden. I lost my father in 1999. He had a heart attack. But my mom has done a great job raising five lovely daughters.

Father’s day is always such a hard time for me. I wish I could see my dad grow old. I wish he could see his grand-daughters. I know he would love them. I wish I could go to him when I’m down. He always made me laugh in an instant.

Although I don’t have my dad, I’m so glad I have the best husband and father for my girls. They look up to him so much. Every day he tries so hard to grow as a father. He doesn’t know how to handle girls sometimes, but he’s learning. That’s all I can ask. I will make sure they always have him in their life. And if that means sneaking in grains and reducing sugar in my recipes, so be it.

My sister Alex (the youngest and standing in the middle in the first picture) babysat the girls on Saturday so Rudy and I could enjoy a night out. Rudy suggested we try P.F. Chang’s. I was surprised he wanted to go there. Neither of us had ever tried it. He doesn’t like large crowds. While we waited to be seated we looked through the menu. It takes me a really long time to decide what I want to eat and they had an extensive choice of options. I chose the coconut curry vegetables from the vegetarian section. It is stir-fried vegetables, crispy silken tofu and peanuts in a mild curry powder and coconut milk sauce. Oh my god! This was the best thing I ever ate!! It was so good. The coconut was somehow soaked into the vegetables and especially the tofu. I ordered it with brown rice. If I can recreate this, I’ll be a happy girl. I only ate half of it and brought the rest home.

On Sunday we got up early to meet Rudy’s mom for breakfast. The rest of the day Rudy did what he wanted. Install satellite radio on his car. He loves his BMW he purchased a few months ago. So we bought him a BMW keychain and wallet.
