WIAW: Goodbye September
Happy Wednesday friends! I am feeling so much better after my vent post from Monday. Thank you all for your kind words. I’m realizing crappy days happen and I just need to take the time to take a break if I need it and not feel bad about that.
Wow, I can’t believe we are already at the end of September! Each month is just flying by now. The holidays are approaching fast and I’m so not ready for it. But, I’m still excited about it. Before I get ahead of myself let’s stick to what I’m eating for WIAW. Thanks Jenn for hosting!
I decided to change things up for breakfast. I almost never have eggs for breakfast unless they’re in the form of “oatmeal minus the oats”. I made a egg white omelet with onions, tomatoes, and black beans. Pretty good. I’ve never had beans with eggs before and I liked it! I topped it with salsa and a jalapeno on the side. I love the carrots!
Lunch was quinoa pasta once again. It’s a great post-workout meal because it really fills me up. After cooking vegetables and pasta, I added 2 tablespoons tahini and juice of 1 lemon. I was very surprised how great this came out! A perfect post-recovery meal.
For dinner I had a tuna wrap with roasted vegetables on the side. Preparing my vegetables makes it easy to put together a meal without spending too much time cooking and therefore snacking when I shouldn’t. I added 1 tablespoon coconut oil before roasting the vegetables. It gave them a little bit of sweetness. Delicious!
I use Tumaros for my wraps. they are very low in carbs and calories. Coming in at just 50 calories, 1.5g of fat and 11g of carbs they are a great substitution for tortillas. I found them at my local healthy food store: Sprout’s.
