WIAW: Latest Eats
Before we get into What I Ate Wednesday, I just have to say thank you all very much for the congratulations and support from my 10k recap post. Your kind words mean the world to me! I couldn’t have better friends; thank you all! I still can’t get over it and I probably won’t for a while! ![]()
Now on to WIAW! I mostly have a bunch of random meals from the week and this past weekend. It was a busy one. Thanks again Jenn for hosting this lovely party.
I was sent some skinnybits to try out. They are made of sprirulina and made to help ease cravings.
It said to either chew or swallow 12 tabs. I tried chewing them and I wanted to throw up. They were very chalky and green. I couldn’t get the green out of my mouth. I swallowed the rest. I didn’t feel much of a difference in my hunger with these. I will try them again but I will not be chewing them.
On Saturday, we celebrated my sister’s birthday. All there was to eat was meat, but my mom offered some fish from her freezer and Rudy cooked it up for me. Of course I had to have nachos. They’re my favorite!
I made tres leches cupcakes for my sister. They were a hit! I tried one of my sisters and I have to admit, they were delicious. I’m sure they’ll be making a repeat appearance soon.
On Sunday after the race, we went to a mexican restaurant and I had some eggs with jalapeno, tomatoes and onion with a side of beans. It was just okay. I was still hungry.
For lunch, I had tilapia with avocado, brown and wild rice with a sweet potato. I used a laughing cow cinnamon cream cheese wedge and cinnamon on top.
Last nights dinner was a fall salad. Yes, finally I’m starting to enjoy some fall foods. I put together mixed greens, 2 hard-boiled eggs, brown rice mixture, cooked figs and roasted butternut squash made with cinnamon and pumpkin pie spice. I’m pretty sure this is the best salad I’ve ever made! I can’t wait to enjoy this one again!

I cannot get over how delicious all of your meals look. I did have to laugh though that you got eggs at a mexican restaurant. I think you may be the first person I’ve ever known that has done this.
Ha ha! Yeah I live in a city where every corner there is a mexican restaurant. So i’m over it. The menu was very limited!
The salad with figs looks so good!
Ditto–how do you cook the figs?
I just cooked them in a pan with a little bit of coconut oil.
I’ve never heard of those skinny bit things. I’m curious to hear how they work after you’ve used them for awhile! Keep us posted!!
I only have a few samples, but I will let you know for sure!

I’ve never thought of putting cream cheese on my sweet potato – I always stick w/ cinnamon and maple syrup. Looks good!
It’s delicious and I only need half a wedge.

Ha ha! They do look so much alike! Except butternut squash is a little bit sweeter.
Your salad is beautiful and has me craving hard-boiled eggs! I’ve been eating them fried each morning, and I think its time to try boiling some.
