WIAW: Pumpkin, Slime and Asadero Cheese
We are half way through October already. Unreal. Thank goodness I bought the girls their costumes early this year. They usually change their mind about 15 times, but this year they didn’t! I can’t wait to share them with you all!
Before I get ahead of myself, let me share what I’ve been eating this week. Thank you Jenn for another fun month! Check out Pea’s and Crayons to see what fun Halloween goodies everyone else is eating.
Breakfast: What screams October more than pumpkin pancakes? I have to admit, I sort of cheated on these. I used Kodiak Cakes pancake mix. I added pumpkin, flaxseed and pumpkin spice mix.
Lunch: It may not be spooky but it’s about as slimy as I get. I was really hungry but didn’t have anything ready. I put together this wrap. I filled it with zucchini, cactus salad (I found it at a local Hispanic grocery store), and a Chinese spicy chile crisp topping. It’s like red pepper baked with other spices.
Snack: I want fall to start so bad! So much so that I enjoyed a Mexican hot chocolate and a pumpkin muffin with my air conditioner on. It was lovely.
Dinner: Yummy homemade pizza. I was pretty impressed with myself on this one. I used my healthy pizza dough recipe but I apparently need some work on my rolling. Anyhow I topped it with pizza sauce, tomatoes, diced green chile, two chipotle peppers and asadero cheese that I bought this past weekend at the dairy farm. So delicious!!
I didn’t realize I’ve been eating so many spicy foods this week. I guess I’m in a local foods kind of mood.

It’s really good! Some people don’t like it if they have a problem with textures. I’m sure you’d be able to find it if you have a hispanic grocery store near you.
